Can any router head be fixed to this unit then?
Depending on your mechanical abilities you could fit any head to the x-axis. There are various mounting holes to fix whatever you need to the head, but you would have to design and build a custom head to fit. You could run it with the small router to see how you get on first.
Does it have the suction bed that hold the sheets down?
I made a metal frame to hold the sacrificial MDF bed this could easily be converted to a vacuum bed (about a days work). And the router does come with a 3 phase vacuum pump which I have personally never used, but should provide the air flow to hold your parts down. At the moment I use drywall screw to hold down the sheets, and add tabs to hold the parts in place, then its just a case of sanding of the tabs off with a belt sander.
If you are looking for someone to manufacture your stages, the router is available to hire. This includes all tooling, electricity and labour costs @ £25/hour

Not sure, I do not have 3 phase so have not had a chance to wire it up. I should point out it is not technically a vacuum pump but a blower made by Dayton in the states. If you were keen on the machine I could take it to a friends to test.
Does it cut accurately to size?
Yes it accurate to within 0.5mm im being conservative here. But I would assume for your job this would be within tolerance?

i think that would be accurate enough
does a blower do the same thing as a vacuum?? would be good to know if it worked.
what size pieces does it break down into, just thinking about what size van would be required.

Yes the machine is still for sale,
Here are the overall dimensions 3125mm * 4575mm * 1600mm
The working bed size dimensions are 4000mm * 2800mm

Yes it can, I have machined guitar necks and various other 3d items from hardwood.
