Hi there and welcome to the site. Well you have a steep but do-able learning curve, and plenty here to help you. One thing I would say, though, is that you are going to struggle on donor parts for a machine of that size from printers etc. eBay will be your friend here...

When you say I'll struggle on finding doner parts from printers and copiers, did that include motors and power supplies?
I can understand how specialist the transport section this size would be.
As for Ebay what can i say...us mad tinkers would be lost without it.

Power supplies, maybe, but you're going to need something around 30 - 50v at 10A+ and i doubt you'll find that in a printer or photocopier. Motors are harder, most printers/copiers use steppers but they are usually manufactured for the job and tend to be low torque motors. After all, moving a bit of paper or a scan head isnt a very arduous task compared to smashing a cutting head through a lump of hardwood...
