If you have problems with polyester drying with a sticky surface then put cling film over it to stop the air getting to it. The idea is that the surface stickyness on polyester is designed to chemically bond to the next coat. The final coat should have a wax solution in it that floats to the surface when hardening sealing it so that it hardens properly.
