My Questions are - Is this safe?
- How big of an extraction fan might I need?
- Is there anything else I might need to do?
- Is there any other recommendations?
- Could I make a fan?

If you using any type of electric in a metal box make sure the box is grounded properly and the supply cables are up to the job. I take it you would need a plug and socket arrangement.
