I'm not into cutting stone so don't know the speeds and feeds but what I can tell you is you'll need one hell of powerful spindle to cut Stone at 6mtr/min.!!

First Rack n pinion will be perfectly fine and actually preferred for this length machine.
Your requirements of 0.5mm are very achievable but still the machine will need to be strong and correct...
